Family history since 1901, the Mansard family has always been attached to the strong values that have made its reputation: respect for tradition, family independence, generosity. In this family, wine is an art that is transmitted from the planting of vines to the commissioning of champagne.
The Mansard Gilles vineyard located in Cerseuil, near Epernay, covers 24 hectares and represents the essential asset of this family house. The secrets of the production and the vinification method of this vintage are passed down for 5 generations. The exceptional advantage of this house comes from a selection of 1.70 hectares (out of the 24 present) for the development of this champagne. Only the best grapes and the oldest vineyard plots, especially the best exposed ones, are used to make Mansard Gilles champagne.

Composition
- Blend made from chardonnay and composed of 20 to 25% reserve wines from the previous 2 years:
- 65% Chardonnay
- 23% Pinot Noir and Pinot Meunier, including 12% vinified in red.
- The red wine is made by us from our oldest vineyard dating back to 1971.
Winemaking:
- Manual harvest.
- 100% Cuvée
- Slow and natural settling.
- Alcoholic fermentation at low temperature in oak barrels.
- No malolactic fermentation to preserve aromas and freshness and freshness
- No filtration
- Minimal use of sulfur.
- Dosage: 7 g / l
Tasting notes:
- On the eye: a champagne with a sustained robe, a delicate pink pomegranate with fine bubbles and a persistent foam.
- On the nose: a fresh and gourmet aroma that offers an original palette of red fruits.
- On the palate: light and elegant attack on the palate, followed by a lightly raspberry finish and a pleasant freshness.
Serving:
This vintage Ancestral Rosé is a champagne of a great conviviality that we will be pleased to consume as an aperitif, but also accompanied by a dish of wild salmon, a veal chop “at low temperature” or sushi. For dessert, it will be perfect with a strawberry salad.
